Would it be hard to send this to a different channel based on which project the ticket is assigned?

In theory it's possible but I would recommend that you instead write your own webhook server that is more customised and suited to your needs. Feel free to copy over code from here if you write it in TypeScript (v2-utils folder is what you'll need)
